4 medium Yukon Gold potatoes, thinly sliced

2 cups heavy cream

1 cup whole milk

2 cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

3 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Dijon mustard

1 tablespoon unsalted butter (for greasing the baking dish)

Fresh parsley, chopped (for garnish)

Prep the Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with the butter.

    Prepare the Cream Mixture: In a medium saucepan over medium heat, combine the heavy cream, whole milk, minced garlic, thyme, salt, black pepper, and Dijon mustard. Stir until well mixed and heated through, but do not let it boil. Remove from heat.

      Layer the Potatoes: Arrange a layer of thinly sliced potatoes evenly across the bottom of the prepared baking dish. Drizzle about a third of the cream mixture over the potatoes and sprinkle with a third of the cheddar and Gruyère cheeses.

        Repeat Layers: Continue layering the remaining potato slices, cream mixture, and cheese in two more batches, finishing with a final layer of cheese on top.

          Bake: Cover the baking dish with aluminum foil to prevent excessive browning. Bake in the preheated oven for 50 minutes. After that, remove the foil and bake for an additional 20–25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

            Cool and Serve: Let the scalloped potatoes cool for about 10 minutes before garnishing with fresh chopped parsley. Serve warm and enjoy the creamy goodness!
