1 pound breakfast sausage (pork, turkey, or plant-based)

8 large eggs

2 cups whole milk (or dairy-free substitute)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

4 cups frozen hash browns (thawed)

1 1/2 cups shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/2 cup diced onions

Chopped fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.

    Cook the Sausage: In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat, if necessary, and set aside.

      Whisk the Eggs: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, and smoked paprika until thoroughly combined and fluffy.

        Combine Ingredients: In the greased baking dish, layer the thawed hash browns evenly across the bottom. Spread the cooked sausage over the hash browns. Sprinkle the diced bell peppers and onions evenly on top.

          Pour the Egg Mixture: Gently pour the egg mixture over the layered ingredients, ensuring an even distribution.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the center is set and the top is lightly golden.
