1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, grated

¼ cup fresh chives, finely chopped

1 cup buttermilk, cold

1 tablespoon honey (optional, for a hint of sweetness)

Extra cheddar cheese and chives for topping (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingertips, incorporate the butter until the mixture resembles coarse crumbs.

        Add Cheese & Chives: Gently fold in the grated cheddar cheese and chopped chives until evenly distributed throughout the mixture.

          Combine Wet Ingredients: In a separate bowl, whisk together the cold buttermilk and honey (if using).

            Mix Wet and Dry: Create a well in the center of the dry mixture and pour in the buttermilk mixture. Stir until just combined; be careful not to overmix; the dough should still be a little shaggy.
