2 large bell peppers (preferably one red and one yellow), sliced

1 large onion, sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional for extra heat)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish
