1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

1 cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

1 cup cold sparkling water

Vegetable oil, for frying

2 green onions, finely sliced

2 teaspoons sesame seeds (for garnish)

Fresh cilantro, for garnish

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove any moisture. This will help the coating stick better and create a crispier outcome.

    Make the Batter: In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually whisk in the cold sparkling water, mixing until you achieve a smooth and slightly thick batter.

      Heat the Oil: In a deep frying pan or wok, pour in enough vegetable oil to reach a depth of about 2 inches. Heat over medium-high heat until it shimmers (about 350°F or 175°C).

        Coat the Shrimp: Dip each shrimp into the batter, ensuring they are well coated. Allow any excess batter to drip off.

          Fry the Shrimp: Carefully slide the battered shrimp into the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes, or until they turn golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on a plate lined with paper towels to drain excess oil.
