Ingredients

1 lb salmon fillet, cut into 1-inch cubes

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and black pepper, to taste

1 cup fresh blueberries, rinsed and drained

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

Zest of 1 lime

Instructions

Prepare the Salmon Skewers:

    - In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in the marinade until evenly coated. Let it marinate for at least 15 minutes.

      Make the Blueberry Salsa:

        - In a separate bowl, mix together the blueberries, red onion, cilantro, jalapeño (if using), lime juice, and lime zest. Gently fold the mixture to combine, taking care not to crush the blueberries. Adjust seasoning with salt if needed.

          Assemble the Skewers:

            - Preheat your grill or grill pan over medium-high heat. Thread the marinated salmon cubes onto skewers, ensuring there is a bit of space between each cube for even cooking.

              Grill the Skewers:

                - Place the skewers on the preheated grill and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks. The internal temperature should reach 145°F (63°C).

                  Serve:

                    - Once cooked, remove the skewers from the grill. Serve the salmon skewers hot, topped with the fresh blueberry salsa to add a sweet and tangy contrast.

                      Garnish (Optional):

                        - You can sprinkle extra cilantro on top for garnish and serve with lime wedges on the side for an additional burst of citrus flavor.
