Ingredients

2 cups fresh blackberries

1/2 cup granulated sugar, divided

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon sugar (for crust)

1/4 teaspoon salt (for crust)

1/2 cup unsalted butter, cold and cubed

1/4 cup ice water

1 egg (for egg wash)

Coarse sugar, for sprinkling

Instructions

Prepare the Filling: In a large mixing bowl, combine the blackberries, 1/4 cup granulated sugar, lemon juice, cornstarch, vanilla extract, and salt. Gently stir until the blackberries are coated. Let this mixture sit for about 20 minutes to allow the flavors to meld and the juices to release.

Make the Flaky Crust: In a separate bowl, whisk together the flour, 1/2 teaspoon sugar, and 1/4 teaspoon salt. Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs, with some pea-sized pieces of butter remaining.

Form the Dough: Gradually add the ice water, one tablespoon at a time, until the dough comes together. You may not need all the water. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll Out the Dough: On a floured surface, roll the chilled dough into a roughly 12-inch circle. Don’t worry about perfection; rustic is the goal! Transfer the dough to the prepared baking sheet.

Fill the Galette: Spoon the blackberry filling into the center of the dough, leaving about a 2-inch border. Gently fold the edges of the dough over the filling, pleating as needed to create a rustic look.

Brush the Crust: Beat the egg in a small bowl and brush it over the exposed crust. Sprinkle the crust with coarse sugar for a delightful crunch and extra sweetness.

Bake: Bake the galette in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.

Cool and Serve: Allow the galette to cool on the baking sheet for about 10 minutes. Serve warm or at room temperature, with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
