4 medium zucchini, sliced into 1/2-inch rounds

3 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

Zest of 1 lemon

2 tablespoons grated Parmesan cheese (optional, for serving)

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Zucchini: In a large mixing bowl, combine the sliced zucchini with olive oil, sea salt, black pepper, garlic powder, onion powder, rosemary, thyme, parsley, and lemon zest. Toss the zucchini until evenly coated with the oil and seasoning mixture.

      Arrange on Baking Sheet: Spread the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper. Make sure they are not overlapping for even roasting.

        Roast the Zucchini: Place the baking sheet in the preheated oven and roast the zucchini for 20-25 minutes, or until the zucchini are golden brown and tender. Flip them halfway through the cooking time for even browning.
