Roasted Veggie Tacos with Feta

1 bell pepper, diced (any color)

1 red onion, sliced

1 zucchini, diced

1 cup corn kernels (fresh or frozen)

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon garlic powder

2 tablespoons olive oil

Salt and pepper, to taste

1 avocado, sliced

1 cup crumbled feta cheese

8 small corn or flour tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large bowl, combine the diced bell pepper, sliced red onion, diced zucchini, and corn kernels.

      Season the Veggies: Add the paprika, cumin, garlic powder, olive oil, salt, and pepper to the bowl. Mix well until all the vegetables are evenly coated.

        Roast the Veggies: Spread the seasoned veggies evenly on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly charred, stirring halfway through for even cooking.

          Warm the Tortillas: While the veggies are roasting, heat a skillet over medium heat. Lightly toast the tortillas on both sides until warm and pliable, about 1-2 minutes per side. Alternatively, you can wrap them in aluminum foil and warm them in the oven for the last 5 minutes of the roasting time.

            Assemble the Tacos: Once the vegetables are done, remove them from the oven. To assemble each taco, place a generous scoop of the roasted veggies in the center of a tortilla.
