Roasted Tomato Feta Pasta Salad

12 oz pasta (fusilli or penne works well)

2 pints cherry tomatoes

8 oz feta cheese, crumbled

3 cloves garlic, minced

1/4 cup extra-virgin olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

1/2 cup fresh basil, chopped

Juice of 1 lemon

1/4 cup pine nuts, toasted (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes and Feta: On a large baking sheet, combine the cherry tomatoes, crumbled feta, minced garlic, olive oil, salt, black pepper, oregano, and red pepper flakes (if using). Toss to coat everything evenly. Spread the mixture out in a single layer. Roast in the oven for 25-30 minutes, or until the tomatoes are bursting and the feta is golden.

      Cook the Pasta: While the tomatoes and feta are roasting, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and keep it from getting sticky.

        Combine Ingredients: Once the tomatoes and feta have finished roasting, remove them from the oven and let cool slightly. In a large mixing bowl, combine the cooked pasta, roasted tomato and feta mixture, fresh basil, lemon juice, and toasted pine nuts (if using). Gently toss everything together until well mixed.

          Adjust Seasoning: Taste the salad and adjust the seasoning with additional salt, pepper, or lemon juice as desired.

            Serve: Serve the salad warm, at room temperature, or chilled. It's perfect as a side dish or a light main course!
