Roasted Garlic Mashed Sweet Potatoes

2 large sweet potatoes (about 2 pounds)

1 head of garlic

2 tablespoons olive oil

½ cup unsalted butter, softened

½ cup milk (or plant-based milk for a vegan option)

Salt and pepper, to taste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Pinch of nutmeg (optional)

Instructions
 

Prep the Garlic: Preheat your oven to 400°F (200°C). Take the head of garlic and slice off the top to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and place it in the oven. Roast for about 30-35 minutes until the cloves are soft and caramelized.

    Cook the Sweet Potatoes: While the garlic roasts, peel and chop the sweet potatoes into evenly sized cubes. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until the sweet potatoes are fork-tender.

      Drain and Mash: Once the sweet potatoes are cooked, drain them well and return them to the pot. Squeeze the roasted garlic cloves out of their skins into the pot with the sweet potatoes. Add the softened butter, remaining 1 tablespoon of olive oil, milk, thyme, salt, pepper, and nutmeg (if using).

        Blend to Perfection: Using a potato masher or a hand mixer, mash the sweet potatoes and garlic mixture until smooth and creamy. Adjust seasoning to your taste, adding more milk for creaminess or salt/pepper as desired.

          Serve: Transfer the mashed sweet potatoes to a serving dish. Optionally, drizzle with a little extra olive oil or top with additional thyme leaves for garnish. Serve warm and enjoy the comforting flavors!
