2 pounds Yukon gold potatoes, peeled and chopped into chunks

1 whole head of garlic

4 tablespoons unsalted butter, softened

1/2 cup heavy cream (or whole milk for a lighter version)

2 tablespoons fresh chives, chopped (optional, for garnish)

Roast the Garlic: Preheat the oven to 400°F (200°C). Slice off the top of the garlic head, exposing the individual cloves. Drizzle with olive oil, wrap it in aluminum foil, and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized. Set aside to cool.

    Prepare the Potatoes: While the garlic is roasting, place the chopped potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce the heat to medium-low and let simmer for about 15-20 minutes, or until fork-tender.
