Roasted Garlic Avocado Potato Toast

2 medium-sized russet potatoes

1 whole bulb of garlic

2 ripe avocados

2 tablespoons olive oil

Salt and pepper, to taste

1 tablespoon lemon juice

1 teaspoon red pepper flakes (optional)

Fresh herbs for garnish (such as cilantro or parsley)

4 slices of whole grain or sourdough bread

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Separate the garlic cloves from the bulb but don’t peel them. Place them on a piece of aluminum foil, drizzle with a bit of olive oil, and wrap them up tightly. Roast in the oven for about 30-35 minutes until soft and golden.

    Prepare the Potatoes: While the garlic is roasting, wash and scrub the russet potatoes. Cut them into 1/4-inch thick slices. In a bowl, toss the potato slices with olive oil, salt, and pepper.

      Roast the Potatoes: Place the seasoned potato slices on a baking sheet in a single layer. After the garlic has roasted for about 15 minutes, add the potatoes to the oven and roast them together for 25-30 minutes, flipping halfway, until they are crispy and golden.

        Make the Avocado Mixture: In a bowl, peel and mash the avocados. Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins and into the bowl with the avocados. Add lemon juice, red pepper flakes (if using), and a pinch of salt and pepper. Mix well until creamy and smooth.

          Toast the Bread: Toast the slices of bread in a toaster or lightly grill them to a golden brown.

            Assemble the Toast: Spread a generous layer of the roasted garlic avocado mixture on each slice of toasted bread. Top with a few slices of the roasted potatoes, and finish with a sprinkle of fresh herbs for garnish.
