Roasted Chickpea Wraps with Tzatziki

Ingredients
  

For the Roasted Chickpeas:

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

For the Tzatziki:

1 cup Greek yogurt

½ cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

For the Wraps:

4 large whole grain or spinach tortillas

2 cups mixed greens (spinach, arugula, lettuce)

1 large tomato, diced

½ red onion, thinly sliced

Optional: Feta cheese, olives, or additional veggies of choice

Instructions
 

Roast the Chickpeas:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, combine the rinsed chickpeas, olive oil, paprika, garlic powder, cumin, salt, black pepper, and cayenne pepper (if using). Toss until the chickpeas are evenly coated.

        - Spread the chickpeas out on a baking sheet in a single layer.

          - Roast in the preheated oven for 25-30 minutes, or until golden brown and crunchy, shaking the pan halfway through.

            Prepare the Tzatziki:

              - In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice. Mix well and season with salt and pepper to taste. Refrigerate for at least 15 minutes to allow the flavors to meld.

                Assemble the Wraps:

                  - Warm the tortillas slightly in a skillet or microwave to make them pliable.

                    - Spread a generous tablespoon of tzatziki on each tortilla.

                      - Layer with mixed greens, diced tomato, sliced red onion, and a scoop of roasted chickpeas.

                        - If using, sprinkle feta cheese or add olives and any additional veggies.

                          Wrap It Up:

                            - Fold the sides of the tortilla inwards and then roll it up tightly from the bottom to secure all the fillings inside.

                              - Slice in half if desired and serve immediately or wrap in parchment paper for a convenient on-the-go meal.
