Ingredients
  

2 cans (15 ounces each) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

Freshly ground black pepper, to taste

Optional: 1 tablespoon nutritional yeast for a cheesy flavor

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining the chickpeas, spread them out on a clean kitchen towel. Pat them dry gently as removing excess moisture helps with the crispiness.

      Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, cayenne pepper, salt, and black pepper. If you’re using nutritional yeast, add it as well. Toss well until all the chickpeas are evenly coated with the spices.

        Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they have enough space between them for even roasting.

          Bake: Roast in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. The chickpeas are done when they are golden brown and crispy.
