Roasted Cherry Tomato Tart

1 sheet of puff pastry (thawed if frozen)

2 cups cherry tomatoes, halved

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil leaves, chopped

Zest of 1 lemon

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Tomatoes: In a mixing bowl, combine the halved cherry tomatoes, olive oil, salt, pepper, dried oregano, and balsamic vinegar. Toss well to coat all the tomatoes. Spread them out in a single layer on the prepared baking sheet.

      Roast the Tomatoes: Roast the tomatoes in the preheated oven for about 20-25 minutes, or until they are softened and caramelized. Remove from the oven and let cool slightly.

        Prepare the Puff Pastry: While the tomatoes are roasting, roll out the puff pastry on a lightly floured surface to fit your tart pan. Transfer the rolled pastry to the tart pan, trimming any excess edges. Prick the bottom with a fork to prevent puffing.

          Mix the Cheese Filling: In a bowl, combine the ricotta cheese, grated Parmesan, chopped basil, and lemon zest. Season with salt and pepper to taste. Mix until well-combined.
