Roasted Cherry Tomato Pasta

2 cups cherry tomatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

12 ounces pasta (penne or spaghetti works best)

1/2 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese (optional)

Zest of 1 lemon

Juice of 1/2 lemon

Preheat the oven: Preheat your oven to 400°F (200°C).

    Roast the tomatoes: In a medium bowl, toss the cherry tomatoes with 2 tablespoons of olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper. Spread the mixture on a baking sheet in a single layer and roast in the oven for about 25-30 minutes, or until the tomatoes are caramelized and bursting with juices.

      Cook the pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the remaining water and set the pasta aside.

        Combine ingredients: In a large bowl, combine the roasted cherry tomatoes (with all their juices), the remaining 1 tablespoon of olive oil, the cooked pasta, lemon zest, and lemon juice. Toss everything together, adding pasta water a little at a time until you achieve your desired sauce consistency.

          Add fresh herbs and cheese: Gently fold in the chopped basil and Parmesan cheese (if using). Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
