Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Hot sauce (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, ground cumin, chili powder, garlic powder, salt, and pepper. Toss until the cauliflower is evenly coated.

      Roast the Cauliflower: Spread the cauliflower mixture in a single layer on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until the cauliflower is tender and caramelized.

        Warm the Tortillas: While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable. You can also wrap them in foil and place them in the oven for the last 5 minutes of the cauliflower roast.

          Assemble the Tacos: Once the cauliflower is roasted, assemble the tacos. Place a generous amount of roasted cauliflower on each tortilla. Top with shredded red cabbage, avocado slices, and fresh cilantro.

            Add the Finishing Touches: Squeeze fresh lime juice over the tacos and drizzle with hot sauce, if desired.

              Serve: Enjoy the tacos warm, garnished with extra lime wedges and cilantro if you like!
