4 medium carrots, peeled and sliced into thin ribbons

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon ground cumin

1 teaspoon honey (or maple syrup for vegan option)

4 oz goat cheese, crumbled (or use a plant-based alternative)

1/4 cup fresh arugula or spinach

1 tablespoon balsamic glaze (optional, for drizzling)

Fresh herbs for garnish (like thyme or parsley)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: In a mixing bowl, toss the carrot ribbons with olive oil, salt, pepper, cumin, and honey until evenly coated.

      Roast the Carrots: Spread the carrot ribbons out on a baking sheet in a single layer. Roast in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.

        Prepare the Flatbread: While the carrots are roasting, place the flatbreads on another baking sheet. Optionally, brush a little olive oil on each flatbread for added flavor and crispness.

          Add Goat Cheese: Once the carrots are nearly done, take them out of the oven. Remove the flatbreads and crumble the goat cheese evenly over them.

            Top with Carrots: Carefully distribute the roasted carrots over the cheese on each flatbread.

              Bake: Return the flatbreads to the oven and bake for an additional 5-7 minutes, or until the cheese is warm and slightly melty, and the edges of the flatbread are golden brown.
