Ingredients

1 cup dark chocolate chips (70% cocoa or higher)

½ cup unsalted butter

½ cup granulated sugar

2 large eggs

2 large egg yolks

½ teaspoon vanilla extract

¼ cup all-purpose flour

2 tablespoons cocoa powder

¼ teaspoon salt

1 tablespoon powdered sugar (for dusting)

Optional: ice cream or whipped cream (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a muffin tin generously with butter or non-stick cooking spray.

Melt Chocolate and Butter: In a heatproof bowl, combine the dark chocolate chips and unsalted butter. Melt together in the microwave in 30-second intervals, stirring until smooth and fully combined. Allow it to cool slightly.

Mix Sugar and Eggs: In a separate mixing bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until the mixture becomes pale and slightly thickened (about 2-3 minutes).

Combine Ingredients: Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. Make sure to blend until smooth.

Sift Dry Ingredients: In another bowl, sift together the all-purpose flour, cocoa powder, and salt. Gently fold these dry ingredients into the chocolate mixture using a rubber spatula, mixing until just combined. Do not overmix.

Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. Leave a little space at the top as the muffins will rise while baking.

Bake: Place the muffin tin in the preheated oven and bake for 12-14 minutes. The muffins should be firm around the edges but still slightly soft in the center.

Cool Briefly: Remove from the oven and let the muffins cool in the tin for just 1-2 minutes. Carefully invert the tin onto a plate to release the muffins.

Serve: Dust the tops with powdered sugar. Serve immediately, with a scoop of ice cream or a dollop of whipped cream if desired, so you can crack into the warm center!
