Ingredients

1 cup (170g) high-quality dark chocolate (70% cocoa or higher), chopped

½ cup (115g) unsalted butter

¾ cup (150g) granulated sugar

½ teaspoon vanilla extract

3 large eggs

2 large egg yolks

½ cup (65g) all-purpose flour

¼ teaspoon salt

Cocoa powder (for dusting muffin tins)

Optional: powdered sugar and fresh berries for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a muffin tin by greasing it with butter or non-stick spray and dusting each cavity with cocoa powder to prevent sticking.

Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the chopped dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth. Allow it to cool slightly.

Mix Sugar and Eggs: In a large mixing bowl, whisk together the granulated sugar, vanilla extract, eggs, and egg yolks until the mixture is light and frothy.

Combine Mixtures: Gradually add the melted chocolate mixture to the egg mixture, stirring continually to combine. Be careful not to let the chocolate cool too much, or it may solidify when mixed with the egg.

Add Dry Ingredients: Sift the all-purpose flour and salt directly into the bowl. Gently fold these dry ingredients into the wet mixture until just combined. Do not over-mix; a few streaks of flour are okay.

Fill Muffin Tins: Pour the batter into the prepared muffin tins, filling each cavity about ¾ full. This will allow room for the muffins to rise and create that gooey center.

Bake: Place the muffin tin in the preheated oven and bake for 12-14 minutes. The tops should be set while the insides remain soft and molten. Keep an eye on them, as overbaking will lose the lava effect.

Cool Slightly: Once done, remove from the oven and let the muffins sit in the tin for 1-2 minutes. Carefully invert the tin onto a wire rack, tapping gently to release the muffins.

Serve and Garnish: Serve the muffins warm to enjoy the molten center. If desired, dust with powdered sugar and serve with fresh berries on the side for a delightful presentation.
