Ingredients

2 cups cooked rice (preferably day-old for better texture)

1/2 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/4 cup chopped fresh parsley

1/4 cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or olive oil)

Instructions

Prepare the Rice Mixture: In a large bowl, combine the cooked rice, grated Parmesan cheese, green onions, parsley, and all the seasonings (garlic powder, onion powder, paprika, salt, and pepper). Mix until well combined.

Bind the Ingredients: Add the flour and egg to the rice mixture. Stir until the mixture is cohesive and can be easily shaped into patties. If the mixture feels too wet, add a little more flour until the right consistency is achieved.

Form the Patties: Using your hands, shape the mixture into small patties, about 2-3 inches in diameter and 1 inch thick. You should get around 10-12 patties depending on the size.

Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until shimmering. To test if the oil is hot enough, drop a small piece of the mixture into the oil; it should sizzle upon contact.

Fry the Patties: Carefully place the patties in the skillet, avoiding crowding. Fry each side for about 3-4 minutes or until golden brown and crispy. Adjust the heat as necessary to prevent burning.

Drain Excess Oil: Once cooked, remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

Serve: Enjoy the rice patties warm, garnished with additional parsley if desired, and serve with your favorite dipping sauce or aioli.
