Ingredients

1 cup rolled oats

½ cup almond flour

½ cup almond butter

¼ cup maple syrup (or honey)

½ cup fresh raspberries (or frozen, thawed)

1 tsp vanilla extract

½ tsp baking powder

¼ tsp sea salt

2 tbsp sliced almonds (for topping)

Extra raspberries for garnish (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and sea salt. Mix well until uniform.

Whisk Wet Ingredients: In another bowl, whisk together the almond butter, maple syrup, and vanilla extract until smooth and creamy.

Combine Mixtures: Gradually pour the wet mixture into the dry mixture, stirring until they are well combined. Gently fold in the fresh raspberries, being careful not to crush them too much.

Spread into Pan: Transfer the mixture into the prepared baking dish and spread it evenly using a spatula. Sprinkle the top with sliced almonds for added crunch.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes or until the edges start to turn golden and a toothpick inserted into the center comes out clean.

Cool and Slice: Once baked, remove the dish from the oven and allow it to cool in the pan for at least 10 minutes. Carefully lift the bars out using the parchment paper and let them cool completely on a wire rack before cutting them into squares or bars.

Serve: Garnish with extra raspberries if desired and enjoy your Raspberry Almond Bliss Bars as a delicious snack or dessert!
