Ingredients

1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes

1/2 cup ranch dressing

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried parsley

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Skewers (wooden or metal, soaked in water if wooden)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Chicken: In a large bowl, combine the ranch dressing, grated Parmesan cheese, minced garlic, onion powder, dried parsley, smoked paprika, and black pepper. Mix well to create a marinade.

Add Chicken: Add the cubed chicken breasts to the marinade and toss until evenly coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld.

Preheat Grill or Oven: If using a grill, preheat to medium-high heat. If using an oven, preheat to 400°F (200°C).

Prepare Skewers: If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

          Cook the Skewers:

            - Grilling: Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

              - Oven: Place the skewers on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the chicken is fully cooked and lightly golden.

Serve: Remove the skewers from the grill or oven. Garnish with fresh chopped parsley and serve with lemon wedges on the side for a zesty kick.

Enjoy: Pair these skewers with a fresh salad, grilled veggies, or your favorite sides for a complete meal!
