8 oz (225 g) spaghetti or your favorite pasta

6 slices of thick-cut bacon, chopped

3 cloves garlic, minced

1 cup heavy cream

½ cup freshly grated Parmesan cheese

½ tsp black pepper

¼ tsp red pepper flakes (optional, for a kick)

Salt, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, stirring occasionally, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, leaving the bacon fat in the skillet.

      Sauté the Garlic: In the same skillet with the bacon fat, add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.

        Create the Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir continuously for about 2-3 minutes until the cream begins to thicken slightly.

          Add Cheese and Season: Gradually whisk in the grated Parmesan cheese until melted and incorporated. Season with black pepper, red pepper flakes (if using), and salt to taste.

            Combine Pasta and Sauce: Add the cooked spaghetti to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
