1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon ground cloves

½ teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

¾ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper or silicon liners or grease with non-stick spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.

      Blend Wet Ingredients: In another large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and well blended.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Gently fold the mixture until just combined; be careful not to overmix. It's okay if a few flour streaks remain.

          Add Nuts & Chocolate (if using): If you’re using nuts or chocolate chips, gently fold them into the batter.

            Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tins, filling each cup about ¾ full.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
