1 cup all-purpose flour

1/2 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup canned pumpkin puree

2 large eggs

1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)

1/4 cup brown sugar

1/4 cup melted butter (or coconut oil)

1 teaspoon vanilla extract

1/2 cup chopped pecans (plus extra for garnish)

Maple syrup (for serving)

Instructions
 

Preheat your waffle iron according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In another bowl, mix together the pumpkin puree, eggs, buttermilk, brown sugar, melted butter, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine. Fold in the chopped pecans.

          Lightly grease the preheated waffle iron with non-stick spray or a small amount of melted butter. Pour an appropriate amount of batter onto the center of the waffle iron (usually about 1/2 to 3/4 cup, depending on your iron’s size).

            Close the waffle iron and cook according to the manufacturer's instructions, typically for 3-5 minutes, until the waffles are golden brown and crisp.

              Carefully remove the waffles and keep them warm in a low oven while you repeat the process with the remaining batter.

                Serve the waffles warm, topped with extra chopped pecans and a generous drizzle of maple syrup.
