Ingredients

1 sheet of puff pastry, thawed

1 cup pumpkin puree (canned or fresh)

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp nutmeg

1/4 tsp ground ginger

1 egg, beaten (for egg wash)

A pinch of salt

Optional: chopped pecans or walnuts for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to ensure it's even and pliable. Cut the sheet into 2-inch squares.

Make the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt. Mix until smooth and well combined.

Assemble the Bites: Place a teaspoon of the pumpkin cream cheese filling in the center of each puff pastry square. Be careful not to overfill. Brush the edges of the pastry with the beaten egg to help seal.

Fold and Seal: Fold each square over the filling diagonally, creating a triangle shape. Press the edges with a fork to seal them and give a decorative edge.

Egg Wash: Brush the tops of each triangle with the remaining beaten egg for a beautiful golden finish.

Bake: Place the assembled puff pastry bites on a parchment-lined baking sheet. Bake for 15-20 minutes or until golden brown and puffed.

Cool and Serve: Once baked, remove from the oven and let cool slightly. If desired, sprinkle with chopped nuts for added texture before serving.

Enjoy: Serve warm or at room temperature and enjoy the creamy, spiced goodness of these delightful bites!
