Pumpkin Banana Muffins

1 ripe banana, mashed

2 large eggs

1/2 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly with cooking spray.

    Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, mashed banana, eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract. Whisk until well blended and smooth.
