Ingredients

4 tablespoons all-purpose flour

2 tablespoons granulated sugar

1/8 teaspoon baking powder

1/8 teaspoon baking soda

1/4 teaspoon salt

3 tablespoons milk (dairy or non-dairy)

1 tablespoon vegetable oil

1/4 teaspoon vanilla extract

2 tablespoons crushed pineapple, drained

1 tablespoon brown sugar

1 maraschino cherry (for topping)

A sprinkle of cinnamon (optional)

Instructions

In a microwave-safe mug, combine the flour, sugar, baking powder, baking soda, and salt. Stir until well mixed.

Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until a smooth batter forms.

Gently fold in the drained crushed pineapple until evenly distributed in the batter.

In a separate small bowl, mix the brown sugar with a sprinkle of cinnamon, if desired. Spoon this mixture into the bottom of the mug, creating a sweet layer for the cake.

Pour the batter over the brown sugar mixture in the mug.

Carefully place a maraschino cherry on top of the batter for a beautiful presentation.

Microwave the mug on high for 1 minute and 30 seconds. Cooking time may vary depending on your microwave's wattage; check for doneness by inserting a toothpick into the center of the cake—it should come out clean.

Remove the mug from the microwave (it will be hot!) and let it cool for a minute.

To serve, you can invert the mug onto a plate so the caramelized brown sugar tops the cake, or enjoy it directly from the mug.
