1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple, cubed (plus extra for garnish)

1 red bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch chunks

1/3 cup teriyaki sauce (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons honey

1 tablespoon sesame oil

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Skewers (wooden or metal)

Instructions
 

Prepare the Marinade: In a bowl, combine teriyaki sauce, minced garlic, grated ginger, honey, sesame oil, salt, and pepper. Mix well.

    Marinate the Chicken: Cut the chicken thighs into bite-sized pieces and add them to the marinade. Ensure all pieces are coated. Cover and refrigerate for at least 30 minutes, preferably 2-3 hours for deeper flavor.

      Soak Skewers (if using wooden skewers): If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

        Prepare Vegetables and Pineapple: While the chicken marinates, cut the red bell pepper and red onion into similar-sized pieces. If you're using extra pineapple for garnish, cube them as well.

          Assemble the Skewers: Thread the marinated chicken onto the skewers, alternating with the bell pepper, onion, and fresh pineapple pieces.

            Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

              Grill the Skewers: Once the grill is hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally. To ensure the chicken is fully cooked, use a meat thermometer to check that it reaches an internal temperature of 165°F (75°C).
