Ingredients

1 can (14 oz) sweetened condensed milk

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/2 cup unsalted butter, softened

3 large eggs

1 tsp vanilla extract

1 cup crushed pineapple, drained

1/2 cup shredded coconut (optional)

A pinch of salt

For the Frosting (optional):

1 cup heavy whipping cream

2 tbsp powdered sugar

1/2 cup crushed pineapple (well-drained)

Toasted coconut for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

Mix the Wet Ingredients: In a large mixing bowl, beat the softened butter with a hand mixer until creamy. Gradually add the sweetened condensed milk and continue to mix until well combined.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing just until combined. Be careful not to overmix.

Add Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut (if using) until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared cake pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Prepare the Frosting (optional): In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form. Fold in the crushed pineapple.

Frost the Cake: Once the cake is completely cool, spread the whipped pineapple frosting on top. Garnish with toasted coconut if desired.

Serve & Enjoy: Slice the cake and serve! Enjoy the tropical flavors of pineapple and coconut with the sweetness of condensed milk.
