Pineapple Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

1 medium fresh pineapple, peeled, cored, and cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

¼ cup soy sauce

2 tbsp honey

2 tbsp olive oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tsp ground black pepper

Juice of 1 lime

Wooden skewers, soaked in water for 30 minutes

Instructions
 

Prepare Marinade: In a medium bowl, whisk together the soy sauce, honey, olive oil, minced garlic, grated ginger, ground black pepper, and lime juice until well combined.

    Marinate Chicken: Add the chicken pieces to the bowl and stir to coat thoroughly. Let it marinate for at least 30 minutes in the refrigerator to absorb all the flavors.

      Preheat Grill: While the chicken is marinating, preheat your grill to medium-high heat.

        Assemble Skewers: Once the chicken has marinated, take the soaked wooden skewers and begin to thread them. Alternate between threading the chicken, pineapple, and bell pepper pieces until the skewers are filled, leaving a little space between each item for even grilling.

          Grill Skewers: Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.

            Serve: Remove skewers from the grill and let them rest for a couple of minutes. Serve hot with a sprinkle of fresh cilantro or parsley for garnish, if desired.
