Ingredients
  

1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

1 green bell pepper, diced

1 red bell pepper, diced

3 cloves garlic, minced

6 cups beef broth

1 cup heavy cream

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried Italian seasoning

Salt and pepper, to taste

8 oz cream cheese, softened

1 cup provolone cheese, shredded

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Sauté the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced sirloin and cook until browned on all sides, about 5-7 minutes. Remove beef from the pot and set aside.

    Cook Vegetables: In the same pot, add the chopped onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

      Make the Broth Base: Pour in the beef broth, and stir in the Worcestershire sauce, Dijon mustard, and Italian seasoning. Bring the mixture to a boil.

        Add the Cream: Once boiling, reduce heat and stir in the heavy cream and softened cream cheese until smooth and creamy. Return the cooked beef to the pot and let everything simmer for about 10-15 minutes.

          Melt the Cheese: Add the provolone and cheddar cheese to the soup, stirring until melted and well combined. Taste and season with salt and pepper as needed.
