For the Crust:

1 ¾ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

1 teaspoon vanilla extract

A pinch of salt

For the Cheesecake Filling:

24 oz (3 packages) Philadelphia cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

2 tablespoons all-purpose flour

Zest of 1 lemon (optional, for an extra zing)

For the Topping:

Fresh berries (strawberries, blueberries, or raspberries)

Whipped cream (optional)

Preheat oven and prepare the pan: Preheat your oven to 325°F (160°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, vanilla extract, and salt. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking pan to create an even layer. Bake in preheated oven for 10 minutes. Remove and let cool slightly.

      Prepare cheesecake filling: In a large bowl, beat the softened Philadelphia cream cheese using an electric mixer until smooth and creamy (about 1-2 minutes). Gradually add in the granulated sugar, mixing until combined. Scrape down the sides of the bowl.

        Incorporate eggs and other ingredients: Add in the vanilla extract and lemon zest (if using), followed by the eggs one at a time, mixing just until combined. Be careful not to overbeat. Finally, add the sour cream and flour, and mix until the batter is smooth and creamy.

          Combine and bake: Pour the cheesecake filling over the cooled graham cracker crust. Smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the edges are set, but the center still has a slight jiggle (it will firm up as it cools).

            Cool and chill: Once baked, remove the cheesecakes from the oven and allow them to cool in the pan at room temperature for an hour. After that, refrigerate for at least 3-4 hours, or overnight for best results.

              Serve: Once chilled and set, lift the cheesecake bars out of the pan using the parchment paper edges. Cut them into squares or rectangles as desired. Top with fresh berries and a dollop of whipped cream if you like, before serving.
