2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup basil pesto

4 slices fresh mozzarella cheese

1 large tomato, sliced

Fresh basil leaves, a handful

4 slices of crusty artisan bread (like ciabatta or sourdough)

2 tablespoons balsamic glaze

2 tablespoons unsalted butter, softened

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until golden brown and cooked through. Remove from heat and let it rest for a few minutes before slicing.

    Assemble the Sandwich: Spread 1 tablespoon of pesto on each slice of bread. On two of the slices (the bottom halves), layer as follows: sliced chicken, fresh mozzarella, tomato slices, fresh basil leaves, and drizzle with balsamic glaze. Top with the other slices of bread, pesto side down.

      Grill the Sandwich: Heat a skillet or griddle over medium heat. Spread softened butter on the outside of each sandwich. Place the sandwiches in the skillet and grill for about 4-5 minutes on each side or until the bread is golden brown and the cheese is melted.

        Serve: Remove the sandwiches from the skillet. Allow them to cool for a minute, then slice in half and serve warm. Enjoy with additional balsamic glaze for dipping, if desired!
