¾ cup granulated sugar

½ cup packed brown sugar

½ cup unsalted butter, melted and cooled

2 large eggs

1 tsp vanilla extract

1 cup buttermilk (or milk with 1 tbsp vinegar)

1 ½ cups peeled and diced apples (like Granny Smith or Honeycrisp)

Optional: ½ cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well with butter or non-stick spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
