For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 tablespoons all-purpose flour

For the Pecan Topping:

1 cup pecans, chopped

¾ cup light corn syrup

½ cup brown sugar, packed

½ teaspoon vanilla extract

2 tablespoons unsalted butter, melted

2 large eggs

Instructions
 

Prepare the Oven and Pan:

    Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper, leaving a bit of an overhang on the sides for easy removal.

      Make the Crust:

        In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well coated and the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake in the preheated oven for 10 minutes. Remove and let cool slightly.

          Prepare the Cheesecake Layer:

            In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar, mixing until well combined. Add in the eggs, one at a time, mixing on low speed after each addition. Mix in the vanilla extract and flour until just combined.

              Layer the Cheesecake:

                Pour the cheesecake mixture over the cooled crust, spreading it evenly.

                  Make the Pecan Topping:

                    In a separate bowl, whisk together the corn syrup, brown sugar, vanilla extract, melted butter, and eggs until fully combined. Fold in the chopped pecans. Spoon this mixture over the cheesecake layer, spreading it gently to ensure even coverage.

                      Bake the Bars:

                        Return the baking dish to the oven and bake for an additional 30-35 minutes or until the pecan topping is set and the edges are slightly golden. The center may still have a slight jiggle, which is okay as it will continue to firm up while cooling.

                          Cool and Chill:

                            Remove the baking dish from the oven and let it cool at room temperature for 1 hour. Once cooled, refrigerate the bars for at least 2 hours, or until completely chilled and set.

                              Serve:

                                Use the parchment overhang to lift the cheesecake bars out of the pan. Cut into squares and serve chilled. Optionally, drizzle with caramel sauce before serving.
