Pear & Fig Salad with Honey Vinaigrette

Ingredients
  

4 cups mixed baby greens (arugula, spinach, and baby kale)

2 ripe pears, thinly sliced

6 fresh figs, quartered

1/2 cup crumbled goat cheese (or feta)

1/3 cup walnuts, toasted and roughly chopped

1/4 red onion, thinly sliced

For the Honey Vinaigrette:

1/4 cup extra-virgin olive oil

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper, to taste
