Peanut Butter Oatmeal Cookies

Ingredients
  

1 cup creamy peanut butter

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips or raisins (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large bowl, combine the peanut butter, brown sugar, and granulated sugar. Mix until smooth and creamy.

      Add the egg and vanilla extract to the bowl, and stir well until fully incorporated.

        In another bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.

          Gradually add the dry ingredients to the peanut butter mixture, stirring until well combined. If using, fold in the chocolate chips or raisins at this stage.

            Using a tablespoon or cookie scoop, portion out the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart.

              Press down lightly on each cookie to flatten them slightly.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will firm up as they cool.

                  Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
