Peanut Butter Honey Cereal Bars

2 cups rolled oats

1 cup crispy rice cereal

1/2 cup creamy peanut butter

1/2 cup honey

1/4 cup brown sugar (packed)

1/4 cup mini chocolate chips (optional)

1/2 tsp vanilla extract

Pinch of salt

Prepare the Baking Pan: Line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal later. Lightly grease the parchment paper with cooking spray or a little oil.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, crispy rice cereal, and a pinch of salt. If you're using chocolate chips, add them to the dry mix as well and stir to evenly distribute.

      Heat Wet Ingredients: In a small saucepan over medium heat, combine the creamy peanut butter, honey, and brown sugar. Stir continuously until the mixture starts to bubble slightly and the sugar is dissolved, about 2-3 minutes. Remove from heat and stir in the vanilla extract.

        Combine Wet and Dry Mixtures: Pour the warm peanut butter mixture over the dry ingredients in the bowl. Using a spatula, mix everything together until all dry ingredients are well coated with the peanut butter mixture. It may be a little sticky, so make sure to combine thoroughly!

          Transfer to Pan: Pour the mixture into the prepared baking pan. Use the back of the spatula or your hands (lightly greased) to press the mixture down firmly and evenly into the pan. Make sure it’s tightly packed to help the bars hold their shape.

            Chill: Place the pan in the refrigerator for at least 1 to 2 hours, or until the mixture is firm enough to cut into bars.

              Cut and Serve: Once chilled and set, lift the mixture out of the pan using the parchment paper. Place on a cutting board and slice into bars of your desired size.

                Store: Store the bars in an airtight container at room temperature for up to a week. For longer storage, consider keeping them in the fridge.
