Peach Quesadillas

2 medium ripe peaches, sliced

1 cup fresh mozzarella cheese, shredded

1/2 cup ricotta cheese

1 tbsp honey (or to taste)

1 tsp cinnamon

1 tbsp butter

4 large flour tortillas

Fresh mint leaves for garnish (optional)

Powdered sugar for dusting (optional)

Instructions
 

Prep the Peaches: Wash and slice the peaches into thin wedges. If preferred, you can peel them for a smoother texture.

    Mix Cheeses: In a bowl, combine ricotta cheese and honey. Stir until well blended.

      Assemble Quesadillas: Lay a tortilla flat on a clean surface. Spread a generous layer of the ricotta mixture evenly across half of the tortilla. Top with shredded mozzarella and a few peach slices. Sprinkle a pinch of cinnamon over the peaches.

        Fold and Cook: Fold the tortilla over to create a half-moon shape. In a non-stick skillet, melt 1/2 tbsp of butter over medium heat. Place the quesadilla in the skillet and cook for about 3-4 minutes on one side, or until it’s golden and crispy. Flip and add the remaining butter if necessary, cooking for another 3-4 minutes until the other side is also crispy and the cheese is melted.

          Repeat: Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling.

            Slice and Serve: Cut the quesadillas into wedges and dust with powdered sugar if desired. Garnish with fresh mint leaves and serve warm.
