Ingredients

1 lb boneless, skinless chicken thighs

1 cup peach preserves

½ cup honey BBQ sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

6 slider buns

½ cup coleslaw mix (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Marinate the Chicken: In a mixing bowl, combine peach preserves, honey BBQ sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to combine. Add the chicken thighs to a zip-top bag or shallow container and pour the marinade over the chicken. Seal and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cook the Chicken: Preheat your grill or stovetop grill pan over medium heat. Remove the chicken from the marinade, allowing any excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (75°C). Brush any reserved marinade on the chicken during the last few minutes of cooking for extra flavor.

Shred the Chicken: Once the chicken is cooked, transfer it to a cutting board and let it rest for a few minutes. Use two forks to shred the chicken into bite-sized pieces.

Assemble the Sliders: Slice the slider buns in half. If desired, lightly toast them on the grill or in a toaster. Place a generous scoop of shredded chicken on the bottom half of each slider bun. If using, top with coleslaw mix for added crunch and flavor. Place the top half of the buns on the sliders.

Serve: Garnish with fresh cilantro or parsley, and serve the sliders warm alongside extra BBQ sauce for dipping if desired. Enjoy your delicious Peach Honey BBQ Chicken Sliders!
