6 ripe peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon cinnamon

For the Oat Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/3 cup unsalted butter, melted

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chopped nuts (walnuts or pecans optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches with granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently until the peaches are evenly coated. Pour this mixture into a greased 9x13 baking dish.

      Make the Oat Topping: In another bowl, mix together the rolled oats, flour, brown sugar, melted butter, salt, and ground cinnamon until crumbly. If you’re adding chopped nuts, fold them in now for an extra crunch.

        Assemble the Crisp: Evenly distribute the oat topping over the peach filling in the baking dish.

          Bake the Crisp: Place the dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
