1 cup rolled oats

1 cup almond milk (or any milk of choice)

1 ripe peach, diced

1 tablespoon honey (or maple syrup for a vegan option)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup Greek yogurt (or dairy-free alternative)

1 tablespoon chia seeds

Optional toppings: additional diced peaches, nuts, granola, or a dollop of whipped cream

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, almond milk, honey (or maple syrup), vanilla extract, cinnamon, Greek yogurt, and chia seeds. Stir until all ingredients are well incorporated.

    Fold in the diced peach gently, being careful not to mash it too much.

      Divide the mixture evenly into two mason jars or airtight containers.

        Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and flavors to meld.

          In the morning, give the oats a good stir. If the mixture is too thick, add a splash more of almond milk to loosen it up.
