2 cups cooked chicken, shredded or diced

1 ripe peach, diced

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1 tablespoon olive oil

1 tablespoon honey

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper, to taste

8 small corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Chicken Mixture: In a large skillet over medium heat, add olive oil. Once heated, add the red onion and bell pepper, sautéing for about 2-3 minutes until they start to soften.
