Peach & Basil Flatbread

1 cup of pizza dough (store-bought or homemade)

2 large ripe peaches, thinly sliced

1 cup fresh mozzarella cheese, sliced or shredded

1/4 cup crumbled goat cheese

1/4 cup fresh basil leaves, roughly torn

2 tablespoons olive oil

1 teaspoon balsamic glaze (optional for drizzling)

Salt and freshly cracked black pepper, to taste

1 teaspoon garlic powder (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

    Prepare the Dough: On a lightly floured surface, roll out the pizza dough into a rectangular or circular shape, about 1/4 inch thick. Transfer the rolled dough to a parchment-lined baking sheet or a pizza peel if using a pizza stone.

      Dress the Base: Brush the top of the dough with olive oil and sprinkle lightly with garlic powder (if using). This will enhance the flavor of the flatbread.

        Add Cheese: Spread the fresh mozzarella evenly across the dough, leaving a small border around the edges. Then, sprinkle the crumbled goat cheese over the mozzarella.

          Layer the Peaches: Arrange the thinly sliced peaches over the cheese. Scatter any remaining mozzarella chunks if you'd like a cheesier flatbread.

            Season: Lightly season with salt and freshly cracked black pepper.

              Bake: Carefully transfer the flatbread to the oven (or onto the preheated pizza stone) and bake for about 12-15 minutes, or until the cheese is bubbly and the edges are golden brown.

                Add Fresh Basil: Once out of the oven, immediately sprinkle the torn basil leaves over the hot flatbread.

                  Finish & Serve: Drizzle with balsamic glaze for an added touch of sweetness and acidity (optional). Slice into wedges and serve warm.
