2 large chicken breasts, boneless and skinless

2 ripe peaches, pitted and sliced

1 cup fresh basil leaves, roughly chopped

2 tablespoons olive oil

1 small onion, finely diced

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon balsamic vinegar

Salt and pepper to taste

1 teaspoon paprika

1 teaspoon Italian seasoning

½ cup feta cheese, crumbled (optional)

Fresh basil leaves for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, paprika, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Onion and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add Peaches and Broth: Add the sliced peaches to the skillet and pour in the chicken broth. Bring the mixture to a gentle simmer, allowing the peaches to soften slightly, about 3-4 minutes.

          Incorporate the Chicken and Flavor: Return the seared chicken breasts to the skillet and drizzle with balsamic vinegar. Cover and let simmer for an additional 5 minutes to allow the flavors to meld.

            Finish with Basil: Stir in the chopped basil leaves and remove from heat. If desired, sprinkle crumbled feta cheese on top for added flavor and creaminess.
