1 lb (450g) ground beef

1 cup long-grain rice

2 cups beef broth (or water)

1 large onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), chopped

2 teaspoons smoked paprika

1 teaspoon sweet paprika

1 teaspoon dried oregano

1 teaspoon salt, or to taste

½ teaspoon black pepper

1 can (14 oz) diced tomatoes, drained

1 tablespoon olive oil

Fresh parsley or cilantro for garnish

Instructions
 

Sauté the Aromatics: In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until soft, about 4-5 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until it's browned and no longer pink, around 5-7 minutes. Drain any excess fat if necessary.

      Add Spices: Stir in the smoked paprika, sweet paprika, oregano, salt, and pepper until the beef is well coated in the spices.

        Incorporate Rice and Liquids: Add the rice to the skillet, stirring it into the beef mixture. Then, pour in the beef broth (or water) and add the drained diced tomatoes. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. If necessary, add a little more broth or water during cooking to ensure the rice doesn’t stick.

            Final Fluff & Serve: Once the rice is tender and the liquid is absorbed, remove the pot from heat. Fluff the rice with a fork and taste the mixture for seasoning, adjusting salt and pepper if needed.
