One-Pot Tomato Basil Pasta

12 oz (340g) spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with their juices)

4 cups vegetable broth

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese (for serving)

Zest of 1 lemon (optional)

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

    Pour the can of diced tomatoes (with juices) into the pot and stir to combine. Add the vegetable broth, salt, black pepper, and red pepper flakes (if using).

      Bring the mixture to a simmer and then add the spaghetti into the pot. Stir well to ensure the pasta is submerged in the liquid.

        Cover the pot and cook for about 10-12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid has absorbed.

          Remove the pot from the heat and stir in the chopped basil leaves. Let the pasta sit for 2-3 minutes to absorb any remaining liquid and enhance the flavors.

            Before serving, taste and adjust seasoning as needed. If desired, sprinkle with lemon zest for an added fresh flavor.

              Serve hot, garnished with additional basil leaves and a generous amount of grated Parmesan cheese on top.
