Ingredients

8 oz (225 g) pasta (fettuccine or penne preferred)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for a kick)

1 cup cherry tomatoes, halved

1 cup low-sodium vegetable broth

1 cup heavy cream

4 oz (115 g) smoked salmon, torn into pieces

1 cup fresh spinach

Zest and juice of 1 lemon

Salt and black pepper to taste

Fresh dill, for garnish

Grated Parmesan cheese, for serving

Instructions

Sauté the Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

Add Tomatoes and Broth: Toss in the halved cherry tomatoes, stirring for 2-3 minutes until they soften. Pour in the vegetable broth and heavy cream, stirring to combine.

Incorporate the Pasta: Add the uncooked pasta into the pot, ensuring it is submerged in the liquid. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally.

Fold in the Salmon and Spinach: Once the pasta is cooked, gently fold in the torn smoked salmon and fresh spinach until the spinach wilts and the salmon warms through.

Season and Finish: Add the lemon zest and juice to the pasta mixture. Season with salt and black pepper to taste. Mix well to combine all flavors.

Serve: Ladle the pasta into bowls or plates, garnishing with fresh dill and a sprinkle of grated Parmesan cheese for an extra touch of flavor.
